Vendor had just started setting up. Foods almost heated through to 165° F. Water and heater working, although switch needs to be repaired.

Priority

Observation: Pre-cooked meats were being reheated in warming units and were not nearly hot enough at time of inspection.

Correction: Begin reheating much earlier if units are capacle of reheating to 165 F or above; or reheat meats in pan on grill until 165 F or hotter and then transfer to holding units.

Correction: Date foods for date of thaw and then utilize within 7 days or discard. May also date for freeze date but must have thaw date on them.

Observation: Hot / Cold water under insufficient or inadequate pressure was found to the hand sink.

Correction: Inadequate water pressure could result in improper handwashing or equipment operation. Restore water under sufficient and adequate pressure to the hand sink. Will be using 5 gallon jug that is present in mobile to wash hands until this issue is resolved.
