Overall facility is clean, neat and organized. Continue working on overall cleanliness particularly under and behind equipment. Self contained fryers do not have tags stating they are working properly, check on this as your hood is not being used. Ice machine must be cleaned more frequently, when you begin to see any build up it must be cleaned. Most likely it will need cleaning monthly. There is a leaking compressor unit in the 4 door unit at the bar. This is a hazard as there are foods in this unit. Repair or replace unit. Obtain more bleach test strips to ensure it is at the appropriate strength (50-100 or slightly above). Green two door refrigeration unit is warm at 48-50 F. Moved temperature sensitive foods out, see if you can clean the fan cover off or if you need a repair person to come look at it. I will send you information on managers food safety classes, vomit and diarrhea template for you to complete and get me a copy and standard operating procedures that you can complete for items you feel are important to your facility. I encourage you to complete all of them, they are great training tools.
