Comments
The sanitizer log that was sent was not correct. Please continue to log the concentrations on the quat dispenser on the wall and of the dish machine. Log each one at the beginning of the day and send it to me in a month. Continue doing the log daily as it will be checked at the next routine inspection and the numbers will need to match with what is seen then. Concentrations for the quat dispenser should be 200 - 400 ppm and for the dish machine should be 50 - 100 ppm. Let the quat dispenser run for a few seconds before filling the bucket and you may need to run the dish machine through a cycle or two. The quat concentration may be slightly over 400 ppm. Service will be called in. If the log is not sent, or is not correct, a second re-inspection will be done and the facility will be charged for this. Potentially hazardous food in the True refrigerator was discarded. Have the unit serviced as soon as possible and so not use for anything that needs to be kept refrigerated. FOLLOW-UP: A correct sanitizer log was received on 11/9/23. Everything looks good. Told them to keep doing the daily log and that I will check it at the next inspection. Re-inspection is cancelled.

Correction:
The temperature will be turned down when the owner gets in. Please monitor the temperature to make sure it stays at or below 41F. The temperature of the right side is higher than on the left side.
