Food Establishment and Restaurant Reports

 
Restaurant and food service inspections focus on identifying risk factors that may contribute to foodborne illness or injury and practices or procedures that focus on general sanitation in the food establishment.  
 
Food establishment inspections are conducted on an annual basis by Public Health Environmental Specialists and Technicians.  These professionals work with food establishment owners and operators to keep food safe from harmful bacteria, viruses, physical hazards and chemical contaminants.  
 
During inspections the Public Health Environmental Specialists and Technicians will follow the flow of food throughout the food facility and observe and verify food safety practices and procedures.
 
Inspection reports represent a “snapshot” of the day and time of the inspection.  On any given day, a food facility could have fewer or more violations than noted in the report.  An inspection conducted on any given day may not be representative of the overall, long-term operation of a food facility.
 
Inspection violations are categorized by:
 
Priority Item: contributes directly to the removal or prevention of hazards associated with foodborne illness (i.e. cooling, cooking)
 
Priority Foundation Item:   supports Priority Items (i.e. cooling methods, calibrated thermometers)
 
Core Item: relates to cleaning, design of building and equipment, or maintenance (i.e. floors, walls and ceilings)
 
Violations observed during inspections are described along with corrective actions in an inspection report with reference to the Wisconsin Food Code.  Violations that result in immediate health hazards to the public are generally corrected immediately.
